Panzanella Wax Bean Salad

I think most people, like me, enjoy eating lighter in the summer.  There’s something about eating a bowl of chili and 90 degree temps that doesn’t mesh well. You know what I mean? I’m constantly on the look out for new versions of traditional cold dishes and the other day while flipping through my recent Fitness magazine {yes, reading it does count as exercise} this Panzanella White Bean Salad was calling my name.  The hubby "claims" he couldn't find white beans anywhere so I adapted and turned it into my version of a wax bean salad. The dish is perfect for summer; light but filling. You can enjoy it for lunch or as a side salad for your next cook out.  My favorite part, of course, is that it is SUPER simple to put together!


2 cans of drained wax beans
½ cup of halved grape tomatoes
½ cup of chopped cucumbers
2 tablespoons of minced basil
2 tablespoons of diced red onions
2 tablespoons of lemon juice
2 tablespoons of olive oil
2 slices of toasted whole-grain bread or croutons

*Mix all ingredients; add salt and pepper to taste.

Panzanella is a type of Italian bread salad typically made with chunks of day old bread, however, I was looking for something a little crunchier and added some croutons.  It was a great decision because the croutons really did add some delicious texture to the mix!
