This saltine cracker toffee bar recipe is seriously as simple as baking can get. It's no secret that "easy" is my kind of cooking. A matter of fact I even considered making "Easy" my mantra for this year & displaying it creatively among some wall decor like I have seen so many other bloggers do with their family mantras. But then I realized hanging up a piece of wall art screaming "THIS YEAR I'M ALL ABOUT BEING EASY" in my home wasn't that bright of an idea after all. It seems like it's a good way to welcome unwanted solicitors from like Craig's List or something. Sooooo, I guess that means we're back to the drawing board on that.
In the mean time let me share this delightfully yummy recipe that I baked over the weekend. One of my co-workers had made these saltine cracker toffee bars for us over Christmas. I admit at first I was confused on why there were crackers in my cookies but one bite and it sucked me in hook, line, & sinker. I'm warning you though these are highly addictive. I'm only assuming that based on the fact that the hubby pointed out last night that I ate the whole batch by myself. Do you know how exhausting it is to live with a man who tells tales? Lies I tell you. He's wrong. I gave him two of them.
- Saltine crackers
- 1 cup brown sugar
- 1 stick butter
- 12 oz chocolate chips
- heath bar toffee chips
- Preheat oven to 350.
- Cover a cookie sheet with parchment or wax paper. Arrange saltines in a single layer on top of the paper.
- Combine butter and brown sugar in a saucepan and place over medium heat. Stir until mixture thickens and starts to boil.
- Pour butter and sugar mixture over saltines. Then take the back of a spoon or spatula & start to spread mixture evenly all over the crackers. Work quickly before the mixture cools.
- Place cookie sheet in preheated oven & bake for 10 minutes, or until bubbly and golden brown. Be careful not to overcook.
- Remove the cookie sheet from the oven & evenly sprinkle chocolate chips over the crackers.
- Return the cookie sheet to the oven just for one quick minute (you'll want to keep them in there just long enough for the chips to slightly melt)
- Remove the crackers from the oven & smooth the melted chocolate over the crackers using the back of a spoon or a spatula.
- Sprinkle toffee chips on top of the chocolate.
- Refrigerate for 2-plus hours. These also freeze well too! Break apart before serving. ENJOY!
