Dose of Delight: The West Niles Edition

I've spent the last 31 hours in bed with a fever trying to
convince myself that I wasn't dying from the West Niles virus.
Thank god for Pinterest.
It quickly nips those hypochondriac symptoms in the butt.
 So let's get on to this week's Dose of Delight {because I've got some pinning to get back to!}

Wild Rice Salad

I was intrigued by this salad as I am with most of Tonia's recipes but mostly it was because the recipe called for rice. Who knew? Rice and salad?
I consider myself a frou frou salad type of gal; meaning I like all the bells and whistles when it comes to my lettuce dishes.
Just lettuce and tomatoes...forget it.
That's why I think this recipe will be right up my alley.

For the Love of Kale

What the kale is going on?
I hope you all had a lovely weekend.
Have I ever told you all about my infatuation with kale?
No really, my love runs deep for it.
And by deep I mean I eat it multiple times a week.
And by multiple times a week I mean I may or may not 
even consider it a dinner when the husband doesn't cook.
Honestly, I have no idea how I've managed to go this long with out turning green.
In particularly, I am talking about baked kale chips.
Ever have them?

They're dope. Seriously addicting.
I heart them so much that I would head bunt a rabbit if it ever tried to come between me and my kale.
Just kidding PETA.
I would never really do that.
No need to flour bomb me on my way to my car tomorrow.
Six months ago when I saw kale chip recipes running rampant on the Net I just figured it was a bunch of bark-eating-Hippies {again} trying to convince me that eating grass was just as delicious as a Five Guys bacon burger. But I'm here to tell you they really are pretty close to it.
 And no I'm not a hippie. And I don't eat bark.
Soooo...if you have yet to jump on the kale bandwagon I really do think you should give 'em a try!
I've perfected the chips in my toaster oven.
Preheat the toaster oven to 350 degrees.
Line a cookie sheet {there are usually mini ones that come with the toaster ovens}
with foil or parchment paper.
Rinse and dry your kale in a spinner. Then tear into bite size pieces. Drizzle olive oil and sprinkle some sea salt on top of the kale. Bake until the edges brown {but not burn!}
Typically, in my oven it takes about 8 minutes to reach optimal kale deliciousness.
Then they're ready to eat. Like Doritos, you can't stop at just one.
Except for unlike Doritos, kale chips are actually good on the thighs.
Anyone else have attachment issues with kale chips?

Friday's Dose of Delight: Let it Razafaz You

My favorite time of the week! But then again who says they hate Fridays anyways?
Crazy people. That's who.
Soooo.....let's get on to this week's Dose of Delight; a mini-mini round up of things that have thrilled, inspired or delighted me lately. Hopefully, they razafaz you too.
Fall is soooo close I can smell it. Oh wait, that's my Glade air freshner.
But really it's going to be here before we know it and with fall comes all those cozy, warm plates of goodness; like pasta, chili, and pot pies.
This dish reminds me of fall although I'd eat it any season, any time, any where.

Wallpaper is sometimes considered the Lindsey Lohan of home decor.
It's got a bad rep.
Mainly because back in the 80's and 90's many people suffered from post-traumatic disorder after TRYING to strip their walls of this may have actually led to a divorce or two as well.
Okay....I may have just made that up BUT thanks to new adhesive glue, wallpaper is now much, much easier to remove.  If you want to just dabble in the look then I suggest this great idea via Apartment Therapy.....just paste up a little for some art work and frame it with moulding.
Genius! Why didn't I think of that?

Frozen Pretzel Yogurt with PB & Chocolate: A Scoop of Heaven

A few weeks ago during our weekend getaway to Lake Geneva I discovered pure heaven at a local homemade icecream shop. I'm a sweet, salty, & sassy type of gal. Okay, I just made up the last part. It just sounded good with all those "Ssss".  Anyways, the best part about this ice cream was the bits of pretzels mixed in with the sweet chocolate & warm caramel.  It makes my heart pitter-patter just thinking about it! Or maybe that's because I just ran up a flight of stairs to get the laundry.

So this past weekend that icecream kept creeping it's way into my thoughts until finally I couldn't take it anymore! I decided to run to the store to pick up some ingredients to see if I could make a replica of the dreamy, dairy goodness. Of course since I can pack on pounds just by looking at ice cream I did my best at trying to slim down the treat by using frozen yogurt and other fat free/sugar free ingredients.

Incase you want to get in on this, here's the 4-1-1:

1.5 quarts of Edy's Slow Churned Yogurt {or any brand will do}
1 cup of  fat free semi-sweet mini chocolate chips
1/2 cups of fat free peanut butter
2 cups of pretzals {I used the small stick kind and just broke them in half as I added them into the misture}
Sugar Free Caramel for topping

 Toss all your ingrediants {minus the caramel} into a mixing bowl and for just a minute mix with a blender at a very low speed. Be careful not to mix long or at a high speed otherwise you'll just get milk!
Then I just threw everything back in the yogurt carton and tossed back into the freezer for an hour
{I felt like this helped the yogurt absorb all the different flavors but then again I have know idea what I'm talking about when it comes to food other than I like it. Alot.}
Lastly, drizzle some of that ooey gooey warm caramel on top & garnish with a few more pretzals and then dive in!


DIY Floor Vent Earring Holder

I'm not sure where the idea that a floor vent would make a good earring holder came from but trust me I've thought of much stranger things while brushing my teeth.
This weekend I finally reached my breaking point. My teeny tiny jewelry box had become a hot mess of studs, hoops, and danglers and I was tired of always wasting time searching for their significant others. I guess that's what you would call the better half of an earring set, right?

Enter the home improvement store. Happen to go there for something else. Forgot. Then saw floor vent and decided for a few bucks it was a quick fix to my earring dilemma.
End of story.

Anyone else ever make a little something-something
from the local Home Depot or Lowes?

PS.  Eating half a gallon of frozen yogurt smothered in gooey caramel, semi-sweet chocolate, & rich peanut butter is never a good idea. Not even if it's for the sake of a recipe blog post coming really soon. You're welcome.

I've Had a Revelation

It has recently come to my attention that I may have a problem.........

That's right I suffer from a serious mental disorder called "bluetitis".
Thankfully I saved myself a trip to the head doctor & was able to diagnose myself simply by taking a quick jaunt down memory lane here on the DN.
Look at that... a revelation!
All you ever hear about is how blogs make you more accountable for yourself.
Quite frankly my blog doesn't have that effect on me.
 I basically make up crap that I'm going to do and then just pray that y'all will forget.
True Story.

BUT who knew your blog would help you see things about yourself?
The good, the bad, the awesome.
Ugh...awesome. I apparently I also have a thingy-thing for the word "awesome".
I think I've now used it on this blog 1, 245 times.
{1,246 times}

Anywho, you'd think I would have suspected that I was suffering from "bluetitis" when I walked into a dressing room the other day with every cobalt blue apparel item ever known to mankind.

So see people you don't need a blog or even a psychiatrist to figure these things out about yourself!
"They" say anything from your driving style to the type of pillow you use can say alot about you.

Apparently liking the color blue means I am capable, reliable, & sensitive.
Sounds about right.....unless I've had a night with my two good friends Pinot & Grigio.
Then I think capable and reliable just go out the door.

Mice & (Wo)Men

Here we are again, starting another week. My weekends have been a blur of events lately.
This past Saturday I totally partied like it was 1986.
See that choke hold I have on that little whippersnapper? This my friends is an example of how to properly hold a child. And all you mamas thought you had a thing or two on me, eh?

Sometimes I think the adults have more fun than the kids.

I totally had a post planned for today. It was going to be deep & profound.
Mmmkay...maybe that's a bit of an exaggeration.
But lucky for you, my free therapy session post can wait for another day.

Speaking of therapy....I also got some dose of retail therapy this past weekend at the Loft for the "friends, family, & fanatic" sales event. That last description "fanatic" was included just for me. Seriously, Annie Taylor you get me every time.
I scored this shirt in the mustard yellow & it was so hot diggity dog comfortable I had to go back and get the pink one.

I would have totally modeled it for you but I'd hate to upstage this beauty.

Dose of Delight: Oh, Why Hello Friday.

For realz! I'm quite certain we skipped a day this week. It just doesn't seem like it should be Friday yet. So much so that I'm begining to question whether I am suffering from early onset of Alzheimers. I don't recall Tuesday or Wednesday happening this week but trust me I don't plan on filing a complaint with the Calendar Association or who ever is in charge of this thingamajiggy any time soon! As long as I am present for the weekends that is all that matters, right?

You know what time it is! No, not hammer time but Dose of Delight time.
A mini-mini round-up of things that have inspired, thrilled, & delighted me lately & should tickle your fancy too! What ever a fancy is?

Sometimes perusing blogland can create some unhealthy attachments. In my case it happens to be with a hedgehog. I can't even recall the blog in which I fell in love with Mr.Hedgey but all I know is some chic slapped a wooden hedgehog {if you know said chic I am referring to please give her a shout out!} clock up on her gallery wall and bam I was infatuated.
That infatuation then led to an obsession with the Etsy clock shop, Decoy Lab.
Simplistic, whimsical, and fun it's like an amusement park for clocks.
